Prima KottuMee Instant Noodles Hot & Spicy is a five-pack of Sri Lankan instant noodles: single-serve 80 g wheat noodle cakes, each with a chilli seasoning sachet and a chilli-onion oil sachet, ready in about three minutes. Eat it soupy, or drain and chop it with egg for a fast kottu. Product of Sri Lanka. Contains wheat gluten and soy; may contain milk; carries a vegetarian mark.

What it is. A fried wheat noodle cake seasoned with chilli in the dough, plus a savoury seasoning sachet of salt, sugar, tomato, carrot, leek, pepper, garlic and onion with a nature-identical chicken flavouring, and an oil sachet of palm oil, chilli and onion flakes. KottuMee is the Prima group's spicy noodle line.

Ingredients. As printed on the single-pack label: Noodle Cake: Wheat flour, Water, RBD Palm oil, Sodium bicarbonate (INS 500ii), Tripolyphosphate (INS 451i), Potassium carbonate, Sodium carboxymethyl cellulose (INS 466), Salt, Tertiary-butyl hydroquinone (INS 319), Chilli powder, Hydrolized vegetable protein. Seasoning Sachet: Salt, Sugar, Corn starch, Yeast, Tomato powder, Dried carrot, Dried leeks, White pepper powder, Caramel IV (INS 150d), Garlic powder, Onion powder, Citric acid (INS 330), Dextrose monohydrate, Silicon dioxide (INS 551), Nature identical chicken flavour. How to use. Boil about 400 ml of water, cook the noodle cake 2 to 3 minutes, then stir in the seasoning and chilli oil. Drain for a dry kottu-style plate or leave soupy. Top with a fried egg, or chop the cooked noodles with egg and vegetables for a five-minute kottu. One pack is one serving.

Serving ideas. Soupy with a fried egg and sliced green chilli; drained and chopped with egg, cabbage and carrot for kottu mee; or tossed with leftover devilled chicken or soya meat for a bigger plate.

Is KottuMee Hot & Spicy vegetarian?
The pack carries a green vegetarian mark, and the chicken taste is a nature-identical flavouring rather than chicken meat. It is not labelled vegan and may contain milk, so vegans should treat it as unsuitable.

How hot is it?
Hot by most standards and noticeably hotter than mild masala noodles or plain ramen: there is chilli in the noodle cake, in the seasoning and in a separate chilli oil sachet. Use half the oil sachet for a milder bowl.

How do I make kottu mee?
Cook the noodles, drain most of the water, then chop them on the pan with a beaten egg, onion, green chilli, shredded cabbage and carrot, stirring in the seasoning and chilli oil at the end. It takes about five minutes and one pack makes one plate.

What is the difference between KottuMee Hot & Spicy and Prima Masala?
Both are Prima's spicy single-serve noodles with an oil sachet. Hot & Spicy has a chilli-forward tomato-and-onion seasoning; Masala uses an Indian-style masala mix. Cooking time is the same three minutes.

What are the allergens?
