Detailed description
What it is. Kaluheenati (literally black heenati) is one of Sri Lanka's old native rice varieties, a short, deep-red grain grown before the modern high-yield types. It is a raw (unparboiled) heirloom grain with a distinctly earthy, nutty taste and a firm chew, and it holds up well under thick curries.
Ingredients. This is plain uncooked rice. Any ingredient statement is printed on the pack.
Allergens. No allergen statement is printed on the pack that we can confirm; check the pack if you have a specific allergy. Rice is naturally free of gluten, and this pack is recorded in our catalog as gluten-free, vegetarian and vegan.
How to cook. Rinse well and cook like other red rice, about 2.5 cups water per cup, 30 to 35 minutes, or soak 30 minutes to shorten cooking. It is chewy and nutty and holds up to thick curries, kola kenda (herbal porridge) and kiribath for those who like a red-rice version. A 2 lb bag is about 6 cups uncooked, roughly 18 servings. Directions printed on the pack: The pack ratio line reads: for 1 cup of rice add 2 1/2 cups of water, 1 tablespoon of margarine and a pinch of salt. Rice cooker: add rice, water, butter or margarine and salt, switch on and let the cooker finish. Saucepan: bring rice and water to the boil uncovered, let the water level drop below the rice, stir, turn the heat to low, cover and simmer 20 to 25 minutes. Microwave: cover and cook on high for 8 minutes, stir, cook on the defrost setting for another 5 minutes, then leave covered for 5 minutes before serving.
Serving ideas. Under thick curries such as jackfruit or dhal; kola kenda with gotukola; or a red-rice kiribath for those who like it that way.
