02How to use

Rinse, soak 20 to 30 minutes, then cook with about 2 to 2.25 cups water per cup of rice for 18 to 20 minutes; the grains come out soft, slightly sticky and noticeably fragrant. It is a favourite for kiribath and yellow rice. A 2 lb bag is about 6 cups uncooked, roughly 18 servings, or enough for two or three batches of kiribath.

Questions

What is Suwandel rice?
Suwandel (fragrant rice in Sinhala) is a native Sri Lankan heirloom variety with a soft, milky texture and a gentle aroma. It was historically reserved for special occasions and temple offerings and is now grown again on a small scale by CIC and others.

Is Suwandel like jasmine or basmati?
It is closer to jasmine: a soft, slightly sticky, aromatic white grain, but shorter and with a milkier scent. It is not a long-grain rice and will not cook up dry and separate like basmati. It shines in kiribath and plain steamed rice.

How much do I need for kiribath?
Two cups of rice with thick coconut milk makes a tray of kiribath for six to eight, so a 2 lb bag covers about three batches. Soak the rice first for an even, creamy result.
