Delmege SoyaMeat Chicken Flavor is a 90 g pack of dried textured soya chunks seasoned with Sri Lankan spices and a chicken-style flavouring, made in Sri Lanka by Delmege. Soak, squeeze and cook it into a curry, a dry devilled dish or a kottu filling as an everyday, shelf-stable meat substitute. Contains soy and mustard; the chicken taste comes from a nature-identical flavouring, not from chicken meat.
How to cook
What it is
Small dried chunks of defatted soya flour, pressed and dried so they soak up flavour like meat, packed with a spice blend built on coriander, chilli, cumin, fennel, fenugreek and cinnamon with garlic, curry leaves, lemon grass and pandan. Once rehydrated it has a chewy, fibrous bite and takes on whatever gravy it is cooked in.
Serving ideas
Devilled with onion, capsicum and tomato ketchup as a side for fried rice; simmered in a red coconut-milk curry with potato; or chopped into a vegetable kottu with roti and egg. Cook it thoroughly before serving.

Does Delmege Chicken Flavor soya meat contain real chicken?
No chicken is listed among the ingredients. The taste comes from a nature-identical chicken flavouring in the seasoning. The pack does not say whether that flavouring is plant- or animal-derived, and it carries no vegetarian mark that we have verified, so strict vegetarians should read the pack before buying.
How do I cook it so it is not chewy or bland?
Soak in hot water for about 10 minutes until fully soft, then squeeze out the water firmly so the chunks can absorb the gravy. Fry with onion, green chilli and curry leaves, or simmer in coconut milk with the seasoning, and cook thoroughly before serving.
How much does one 90 g pack make?
The pack is five servings of 18 g dry, which is half a cup each. Soaked, the chunks roughly triple in volume, so one pack gives two to three side portions for rice, or one generous main portion.
What are the allergens?
It contains soy and mustard. The seasoning also contains monosodium glutamate (E621). No 'may contain' line has been verified for this pack, so check the pack if you have other allergies.
How is it different from Indian soya chunks like Nutrela?
Plain Indian soya chunks are unseasoned. Delmege packs the chunks with a Sri Lankan spice blend and a flavouring, so the curry needs only onion, chilli and coconut milk. It is the style most Sri Lankan households use for soya curry and devilled soya.
How should I store it?
Keep the pack in a cool, dry place and seal it tightly after opening; it is a dry product and keeps for months in a cupboard. Refrigerate any cooked leftovers in a covered container.
