Overview

Delmege SoyaMeat Cuttle Fish Flavor is a 90 g pack of dried textured soya chunks with a seafood-style seasoning built on chilli, coriander, pepper and a nature-identical cuttlefish flavouring, made in Sri Lanka by Delmege. Soak, squeeze and cook it into a devilled dish, a spicy curry or a kottu filling as a shelf-stable stand-in for cuttlefish. Contains soy and mustard.

How to cook

Soak the chunks in hot water for about 10 minutes, squeeze dry, then fry with onion, green chilli, curry leaves and the seasoning, or simmer in a coconut-milk gravy. It goes with rice and dhal, bread, string hoppers or roti, and is a common filling for kottu. A 90 g (3.2 oz) pack gives two to three side portions.

What it is

Dried chunks of defatted soya flour seasoned to echo Sri Lankan devilled cuttlefish: chilli, coriander, pepper and turmeric with ginger, garlic, curry leaves, pandan and lemon grass, plus a nature-identical cuttlefish flavouring. Rehydrated, the chunks are chewy and fibrous and take well to a hot, tangy devilled sauce.

Serving ideas

Devilled with onion, capsicum, tomato ketchup and a squeeze of lime as a side for fried rice or noodles; simmered in a chilli-and-coconut-milk curry; or tossed into a seafood-style kottu with egg. Cook it thoroughly before serving.

FAQs

Does Cuttle Fish Flavor contain real cuttlefish or seafood?

No cuttlefish, fish or shellfish is listed among the ingredients; the taste comes from a nature-identical cuttlefish flavouring. The pack does not say whether that flavouring is plant- or animal-derived, so anyone with a seafood allergy or a strict vegetarian diet should read the pack first.

How spicy is it?

The seasoning leads with chilli and pepper, so it is noticeably hot on its own. You control the final heat by how much extra chilli you add when frying; devilled preparations are usually fiery, a coconut-milk curry is milder.

How do I cook it?

Soak in hot water for about 10 minutes, squeeze dry, then fry with onion, green chilli, curry leaves and the seasoning, or simmer in coconut-milk gravy. Serve with rice, bread, string hoppers or roti, or use it as a kottu filling.

How much protein is in it?

The pack prints 50.2 g of protein per 100 g dry, or about 9 g per 18 g serving, with 0.2 g of fat. Those figures are for the dry product before soaking and cooking.

What are the allergens?

It contains soy and mustard, and the seasoning includes monosodium glutamate (INS 621). No 'may contain' line has been verified for this pack, so check the pack if you have other allergies.

How should I store it?

In a cool, dry place with the pack sealed tightly after opening. It is a dry product that keeps for months in a cupboard; refrigerate cooked leftovers in a covered container.
