Overview

Delmege SoyaMeat Roast Chicken Flavor is a 90 g pack of dried textured soya chunks with a warm-spice seasoning of coriander, cumin, cloves, cardamom, mace and nutmeg and a nature-identical roasted chicken flavouring, made in Sri Lanka by Delmege. Soak, squeeze and cook it into a curry, a dry devilled dish or a kottu filling. Contains soy and mustard; no chicken appears in the ingredient list.

How to cook

Soak the chunks in hot water for about 10 minutes, squeeze dry, then fry with onion, green chilli, curry leaves and the seasoning, or simmer in a coconut-milk gravy. It goes with rice and dhal, bread, string hoppers or roti, and is a common filling for kottu. A 90 g (3.2 oz) pack gives two to three side portions.

What it is

Dried chunks of defatted soya flour with the fullest spice blend in the range: coriander, cumin and fennel with cloves, cardamom, cinnamon, mace and nutmeg, plus garlic, ginger, curry leaves, lemon grass and pandan and a nature-identical roasted chicken flavouring. Rehydrated, the chunks are chewy and fibrous and suit a rich, aromatic curry.

Serving ideas

A thick, dark coconut-milk curry with roasted curry powder for rice or string hoppers; a dry-fried version with onion and curry leaves as a bread accompaniment; or a chicken-style kottu filling with roti and egg. Cook it thoroughly before serving.

FAQs

What is the difference between Roast Chicken Flavor and Chicken Flavor?

The chunks are identical; the seasoning differs. Roast Chicken uses a roasted chicken flavouring and leans harder on the warm spices such as cloves, cardamom, mace and nutmeg, giving a deeper, more aromatic curry. Chicken Flavor is a little lighter and more chilli-forward.

Does it contain real chicken?

No chicken or other meat is listed among the ingredients; the taste comes from a nature-identical roasted chicken flavouring. The pack does not say whether that flavouring is plant- or animal-derived, so strict vegetarians should read the pack before buying.

How do I cook it?

Soak in hot water for about 10 minutes, squeeze dry, then fry with onion, green chilli, curry leaves and the seasoning, or simmer in a coconut-milk gravy. Serve with rice and dhal, bread, string hoppers or roti, or use it as a kottu filling.

How many servings are in a pack?

The pack gives five servings of 18 g dry (half a cup each). After soaking, the chunks roughly triple in volume, so one 90 g pack makes two to three side portions with rice.

What are the allergens?

It contains soy and mustard, and the seasoning includes monosodium glutamate (E621). No 'may contain' line has been verified for this pack, so check the pack if you have other allergies.

How should I store it?

In a cool, dry place with the pack sealed tightly after opening. It is a dry product that keeps for months in a cupboard; refrigerate cooked leftovers in a covered container.
