Harischandra Kurakkan Flour is finger millet flour (kurakkan, Eleusine coracana) from Harischandra Mills of Matara, sold in a 400 g (14.1 oz) pouch. It is the dark, earthy flour behind kurakkan roti, pittu, thalapa and kenda (porridge), traditional Sri Lankan foods that many households still make for breakfast and evening meals.

How to use

Use for kurakkan roti (mixed with grated coconut, salt and warm water), pittu, thalapa, kenda (porridge) and sweets such as welithalapa; Harischandra's welithalapa recipe uses 400 g of the flour for 6 portions. It can also be mixed with wheat flour in breads and baking.

What it is

Flour milled from kurakkan, the Sri Lankan name for finger millet. It is a whole-grain-style, dark brown flour with a nutty, slightly bitter flavour. Harischandra describes it as a low-carbohydrate option rich in protein, vitamins and minerals; Taprovan makes no health claims for it.

How to use

Kurakkan flour is used to make kurakkan roti (mixed with grated coconut, salt and warm water), pittu, thalapa (a stiff porridge), kenda (porridge) and sweets such as welithalapa. Harischandra's recipe for welithalapa uses 400 g of the flour with rice flour, coconut, coconut milk, salt and sugar syrup for 6 portions. You can also mix it with wheat flour in breads, pancakes and baking.

Serving ideas

Roti with pol sambol and lunu miris; thalapa with a pinch of salt and a coconut sambol; porridge with kithul treacle; welithalapa as a sweet at festivals; pittu with curry or kiri hodi.
