Description

Harischandra Special Noodles are dried Sri Lankan wheat noodles made from wheat flour and common salt only, with no egg, oil or flavouring. Boil them for a few minutes and stir-fry with vegetables, chop into kottu or serve with chicken curry and pol sambol in place of rice. Contains wheat; the ingredients are plant-based.

What it is. Plain dried wheat noodles in flat nests, thicker and firmer than instant noodle cakes and sold without a flavour sachet. Sri Lankan families use them as a rice substitute with curry, in stir-fries with a temper of onion and curry leaves, and chopped into kottu.

These are plain dried noodles with no flavour sachet, oil or seasoning, and they are thicker and firmer than instant noodle cakes. Sri Lankans use them as a rice substitute with curry or in kottu, not as a two-minute snack.

What is the difference between Special and Plain Harischandra noodles?
Both are wheat-and-salt noodles from the same mill and are cooked and used the same way. Special is the grade Harischandra features as its main noodle; Plain is the standard pack. Choose by preference and price.

How much should I cook per person?
About 100 g dry per adult as a main course, so a 400 g pack serves four, or three with generous portions. Cook the whole pack and refrigerate leftovers; they reheat well in a stir-fry the next day.

How long do they take to cook?
Three to five minutes in boiling water, then drain and rinse to stop them sticking. Slightly undercook them if you plan to stir-fry afterwards, since they finish cooking in the pan with the vegetables.
