Mc Currie Spice Paste for Meat Curry is a cooked Sri Lankan curry paste of roasted spices, onion, garlic, ginger, tomato and lemongrass in vegetable oil. It is the complete seasoning base for beef, mutton, pork or chicken curry: brown it with the meat, add liquid and simmer. The paste itself contains no meat; it is preserved with E211 and E202.

Detailed description

What it is. A ready-made base that replaces the roasting and grinding of curry powder and the frying of onion, garlic and ginger. It is designed for meat curries but is entirely vegetable-based, so it also seasons jackfruit, mushroom or soya-meat curries.

Ingredients. Vegetable Oil, Onion, Coriandar, Cummin, Fennel, Turmeric, Fenugreek, Tomato Sauce, Chillie, Garlic, Salt, Green Chillie, Ginger, Lemon Grass, Pepper, Curry Leaves, Rampe, Citric Acid, Cardamom, Cinnamon & Permitted Preservatives (E211, E202), as printed on the jar.

Allergens. No allergen statement is printed on the jar, and none of the listed ingredients is one of the major US food allergens. It contains the preservatives sodium benzoate (E211) and potassium sorbate (E202). Check the jar you receive if you have specific allergies.

How to use. Mix the paste before use, brown it with the meat, add a little stock or water and simmer until tender, then add coconut milk if you want a milder gravy; add more paste to thicken. The jar holds two servings of 110 g, enough for roughly 1 kg (2 lb) of meat in two batches. It can also be rubbed on as a marinade. Serve with rice, bread or pittu.

FAQs

How much paste per pound of meat?
The jar is portioned as two 110 g servings, so use about half a jar for 500 g to 1 lb of beef, mutton, pork or chicken. Add more paste if you want a thicker, stronger curry, or a splash of coconut milk to mellow it.

Do I still need curry powder or coconut milk?
No curry powder is needed; the paste already contains coriander, cumin, fennel, fenugreek and turmeric plus onion, garlic, ginger and tomato. Coconut milk is optional: add it at the end for a creamier, milder gravy.

Is the paste itself vegetarian?
Yes. It is a vegetable-oil-based spice paste with no meat in it, so it can also season jackfruit, mushroom or soya-meat curries. The name refers to what it is designed to cook, not what it contains.

Does it contain preservatives or MSG?
The jar lists permitted preservatives E211 (sodium benzoate) and E202 (potassium sorbate), plus citric acid. MSG does not appear in the ingredient list. Check the jar you receive if you avoid any of these.

How long does an opened jar keep?
Keep the lid tight and refrigerate after opening. The oil and preservatives keep it in good condition for a few weeks; always use a clean, dry spoon and discard it if the smell or colour changes.
