Overview
MD Vegetarian Chinese Chilli Paste is a Sri Lankan Chinese-style chilli paste of chilli pieces, vegetable oil, ginger, garlic, sugar, vinegar and salt, sold in a 270 g glass jar. The "vegetarian" in the name means it is made without fish, unlike the Maldive-fish version of the same paste. Stir it into fried rice, noodles and stir-fries for medium heat, or use it as a dip and sandwich spread.
How to use
What it is
A coarse, oily red paste of crushed chilli pieces with ginger and garlic, sweetened lightly with sugar and sharpened with vinegar. It is the Sri Lankan take on a Chinese-style chilli paste, the kind used in Sri Lankan Chinese-restaurant cooking such as fried rice, chilli chicken and devilled dishes. It adds medium heat and a little tang rather than a smoky or fermented flavour.
Serving ideas
Spoon onto the side of egg fried rice, toss with cooked noodles and spring onion, or stir into mayonnaise for a quick spicy spread.

FAQs
What does "vegetarian" mean on this chilli paste?
It means the paste is made without fish. MD also sells a Chinese chilli paste with Maldive fish; this jar is the fish-free version, and its listed ingredients are all plant-based.
How hot is it?
Medium heat, from whole chilli pieces. It is not a mild sauce, so start with a teaspoon and add more to taste.
What can I cook with it?
Fried rice, noodles, stir-fried vegetables, tofu, chicken or prawns, plus dips, sandwich spreads and marinades. Add it near the end of cooking so the chilli and garlic stay bright.
Is it vegan?
The ingredients listed by the manufacturer are chilli, vegetable oil, ginger, garlic, sugar, vinegar and salt, none of them animal-derived. We have not seen a vegan certification, so check the jar if you follow a strict vegan diet.
