Overview

RUH Bombay Biryani Seasoning Mix is a 60 g (2.12 oz) box of spice mix for hot and spicy meat layered pilaf. The box carries a Halal Certified mark and a suitable-for-vegetarians mark, and prints a full biryani recipe for 1 kg of meat and 750 g of basmati rice.

How to use

Use the 60 g packet with 1 kg bone-in meat and about 750 g basmati rice. Fry onions until brown, add meat and ginger-garlic paste, then potatoes, yogurt and the mix. Add 1 cup water and cook until tender. Add tomatoes and green chilies and fry until the oil separates. Layer with 3/4-cooked rice and the yellow food color mixture, cover and simmer on low heat 10 to 15 minutes. Mix and serve hot with salad and raita.

What it is

A ready-blended spice mix for biryani, the layered rice and meat dish of South Asia and the Gulf. The mix supplies the seasoning; the recipe on the box adds meat, basmati rice, onions, potatoes, tomatoes, green chilies, yogurt and oil.

Allergens and warning

The box does not list a contains statement. It states: may contain wheat, sesame, milk, soy and tree nuts. It also warns: contains plum pits.

How to use

The box recipe uses 1 packet (60 g) with 1 kg bone-in meat, 3½ cups (750 g) basmati rice soaked 20 minutes, 3 to 4 sliced onions (300 g), 2 to 3 potatoes cut in 4 pieces (250 g), 3 to 4 sliced tomatoes (300 g), 8 to 10 whole green chilies, 1 cup (200 g) whipped yogurt, 1 cup (175 ml) cooking oil, 2 tbsp ginger paste, 2 tbsp garlic paste, and 1 pinch natural yellow food color mixed in 4 tbsp milk. Fry the onions in hot oil until brown, add the meat and pastes and stir-fry 5 minutes. Add the potatoes, yogurt and the mix and stir-fry 5 minutes on medium heat. Add 1 cup of water and cook covered on low heat until the meat and potatoes are done. Add the tomatoes and green chilies and stir-fry on high heat until the oil separates. Boil the rice in 12 to 13 cups of water until three-quarters cooked and drain. Spread half the rice in a pot, pour the meat curry over it, top with the remaining rice and the food color mixture, cover and simmer on low heat 10 to 15 minutes. Mix before serving hot with salad and raita.
