Overview

RUH Sindhi Biryani Seasoning Mix is a 60 g (2.12 oz) box of spice mix for hot and spicy meat layered pilaf. The box prints a full biryani recipe for 1 kg of meat and 750 g of basmati rice, with water amounts for chicken and for mutton or beef.

How to use

Use the 60 g packet with 1 kg bone-in meat and about 750 g basmati rice. Fry onions until brown, add meat and ginger-garlic paste, then the mix, potatoes and yogurt. Add water (2 cups for chicken, 4 cups for mutton or beef) and cook until tender. Place tomatoes, lemon, green chilies, mint and coriander leaves over the meat and cook 5 to 7 minutes without stirring. Spread 3/4-cooked rice over the meat and do not mix until serving. Serve hot with salad and raita.

What it is

A ready-blended spice mix for Sindhi-style biryani, the layered rice and meat dish of South Asia and the Gulf. The mix supplies the seasoning; the recipe on the box adds meat, basmati rice, onions, potatoes, tomatoes, lemon, green chilies, yogurt, mint, coriander leaves and oil.

Allergens and warning

The box states: contains soy. It also states: may contain wheat, sesame, milk and tree nuts. It warns: contains plum pits.

How to use

The box recipe uses 1 packet (60 g) with 1 kg bone-in meat, 750 g basmati rice soaked 20 minutes, 2 to 3 sliced onions (200 g), 2 to 3 tomatoes in thin round slices (220 g), 2 to 3 potatoes cut in 4 pieces (250 g), 1 medium lemon in thin slices, 10 to 20 whole green chilies, 100 g whipped yogurt, 175 ml cooking oil, 2 tbsp ginger paste, 2 tbsp garlic paste, and chopped mint and coriander leaves. Fry the onions in hot oil until brown, add the meat and pastes and stir-fry 5 minutes. Add the mix, potatoes and yogurt and stir-fry 5 minutes on medium heat. Add water (2 cups for chicken, 4 cups for mutton or beef) and cook covered on low heat until the meat and potatoes are done. Place the sliced tomatoes, lemon, green chilies, mint and coriander leaves over the meat, cover and cook on low heat 5 to 7 minutes without stirring. Boil the rice in 12 to 13 cups of water until three-quarters cooked and drain. Spread the cooked rice evenly over the meat. Do not mix the rice until serving.
